Alright, friends. I've fallen off the wagon right as I was gaining good traction. Woops! Between the holiday and my little boy catching Hand, Foot, and Mouth (aka a special kind of hell), I wasn't cooking well or blogging at all. Clearly. Anyway, here are my meals for this week! I'm going to switch it up and post Friday-Thursday, because typically I go to the store on Friday morning. I don't know why I picked that day, but it's working for me.
Friday: Pot roast with potatoes, onions, and carrots Total for this meal: $14.31
Roasts were BOGO at the store ($7.13) , but I bought potatoes ($3.69) , carrots ($1.50) , and I was sucked into a seasoning packet ($1.99). Normally I make my own spices but I was lazy.
Saturday: Stuffed Shells Total for this meal: $10.77
Jumbo shell noodles ($2.49), ricotta ($2.79), parmesan ($2.99), mozzarella ($2.50), jarred spaghetti sauce that I already had.
Sunday: Beef Stroganoff Total for this meal: $14.38
Stew meat ($5.63), Cream cheese ($2.50), dollap of Sour cream ($1.67), French onion soup can ($1.79) all mixed in the crockpot and served over egg noodles ($2.79)
Monday: Spaghetti Total for this meal: $0
I already had ground beef in the freezer, spaghetti noodles, and the rest of the sauce from Saturday night. Score!
Tuesday: Going out to eat. I'm tired of being stuck in the house! Total for this meal: $26.92 (Womp!)
Wednesday: Small group at church Total for this meal: A LOT!
We are in charge of cooking though so I am doing kid friendly beef enchiladas with rice. It's just ground beef, jarred salsa, cheese all cooked in a skillet, rolled into tortillas and baked until warm and gooey! I had the rice already but I don't even know the total cost of the dinner because we bought stuff at SAMS along with a few household essentials. I'm guessing around $75 but we are feeding 26 people, so I feel like that's not too bad.
Thursday: Chicken Pot Pie Total for this meal: $1
I already have most ingredients, so I only had to buy frozen veggies ($1)
I also bought Motrin, bread crumbs, bread, Ritz crackers, diced ham (BOGO) for eggs in the morning, eggs, pickles, lunch meat, pretzel crisps, a bell pepper, a salad for Nathan to take to work that night since we had been out of town, 2 gallons of milk, chicken nuggets, and 18 eggs. Total at the store: $139.60 Yikes!
